Carrot Cake

Preheat the oven to 175C
Grease and line an 8" round, 3" high cake tin
240 g carrots
Grate the carrots
250 g Flour
300 g Sugar
2 tsp Baking powder
2 tsp Cinnamon
Mix dry ingredients
160 g Oil
3 g Eggs
2 tsp Vanilla essence
add wet ingredients
60 g Dessicated coconut
add grated carrot and coconut
cook for 1 hour
