Coffee Ice Cream

Serves 4

Prepare the ice cream maker
3 shots expresso coffee (50ml each)
80 g sugar
1 tsp vanilla essence
Put the coffee in a pan and dissolve the sugar
allow to cool a little
3 egg yolks
add a little of the coffee to the egg yolks and mix in
Put the egg yolks back into the coffee pan
Heat gently and stir, until it starts to thicken and skin
Allow to cool then put in fridge
200 ml cream
put cream in fridge
Mix the cream and coffee thoroughly
Pour into the ice cream maker
