Creme Brulee

Serves 4

4 Egg Yolks
50 g Sugar
Heat the oven to 150C
Place a tray of water in the oven
Whisk the egg yolks and sugar together
375 ml Cream
125 ml Milk
1 tsp Vanilla essence
Heat the cream in a double boiler
Add the eggs & sugar
put into small dishes
Put the dishes in the tray of water in the oven
cook for 10-15 mins
allow to cool
Either: make caramel and pour it on
Or: sprinkle with sugar and use a blowtorch to caramelise it
