Lemon ginger cake

200 g Dates
Stone the dates
Cover them with boiling water
Preheat the oven to 160C
Grease and line an 8inch cake tin
250 g Cooking apple
1 lemon
Peel, core and chop the apple into 5mm pieces
Grate the lemon
Juice half of the lemon and pour the juice over the apple pieces
50 g root ginger
peel and chop the ginger
200 g Butter
300 g Dark brown sugar
Melt the butter and sugar in a large pan
Allow to cool
Drain the dates and chop them finely
Add the dates and gigner to the butter and sugar
2 Eggs
Beat in the eggs
Add the lemon peel
200 g flour
2 tsp baking powder
Mix the flour and baking powder then add to the mixture
Add the apples
Put into the cake tin and cook for 1 hr 15 minutes
Leave it to cool in the tin
50 g white chocolate
1 tbsp Candied lemon peel
Melt the white chocolate in a double boiler
Draw lines across the cake with it
Sprinkle with finely chopped candied peel
